Rocky Road Cupcakes

I made these for Doug, my boss.  His birthday was last week and he is a chocolate lover. I made my favorite Chocolate cupcake recipe & turned them into Rocky Road Cupcakes by adding marshmellos, mini chips, Pecans, drizzled hot fudge and fresh whip cream!


I will be MIA until August 1st.  I will be moving our office to a new office and won't have much baking time. I have a few things from the last week or so lined up to keep you entertained..and who knows, I may even have a guest post thrown in there :)

Parisian Chic


My sister gave me Bakerella's Cake Pops book for Christmas last year.  I finally cracked it open and let me tell you it is a great book.  I tried to do cake pops a long time ago and they just didn't work.  Her book has step by step instructions and pictures.  It makes it so much easier.
Brenda told me she was going to host a Parisian Chic Martini Party.  For dessert she wanted cake pops & mini cupcakes.  She really should be a professional party planner, she goes all out !   Her  decorations are always beautiful, bouquets filled with feathers and flowers, accents on all the tables, and all matching servingware (pure white).   For this party she had a martini glass for every guest, with their name handwritten on a tag that she tied to the stem, beautiful bouquets and of course, my mini's and cake pops.

I used Duff's candy writers to add the pink accents
and dyed my own chocolate for the teal accents

Red Velvet Cake Recipe (adapted from www.momswhothink.com)

Ingredients:
Cake Ingredients:
1 stick butter, softened
1 1/2 cups sugar
2 eggs
2 ounces red food coloring
2 Tablespoons cocoa (heaping)
1 cup buttermilk
2 1/4 cups cake flour
1 teaspoon vanilla
1 teaspoon baking soda
Frosting Ingredients:
3 Tablespoons flour
1 cup milk
1 cup sugar
1 teaspoon vanilla
1 cup butter
Directions:
Red Velvet Cake Directions:
1. In a larger mixer bowl, cream together butter and sugar.
2. Add eggs one at a time, beating well after each addition.
3. In another bowl, mix red food coloring and cocoa until cocoa is completely dissolved. Add to the creamed mixture.
4. Mixing on low speed, add buttermilk and flour alternately, beginning and ending with flour. Mix well but do not over-beat to ensure a light fluffy cake.
5. Add vanilla flavoring, mix well.
6. Blend the baking soda into the batter.
7. Transfer into two floured and greased 9 inch round cake pans.
8. Bake in preheated 350 degree F oven for 25-30 minutes. Cool.

Frosting Directions:
1. Blend into a small saucepan the 3 tablespoons of flour and the cup of milk. Add the milk to the flour slowly, avoiding lumps.
2. Cook over medium heat, stirring constantly, until mixture resembles glue.
3. Cool completely.
4. Cream together sugar, butter, and vanilla until fluffy.
5. Add to cooked mixture. Beat, high speed, until very fluffy. Frost cooled cake.

Tutorial: Royal Icing Slumber Bags

Royal icing slumber bags or sleeping bags are so easy to make. I made my first ones back in May for Sophie's Birthday.
I start off by drawing a plan.  Then I mix my colors and cut wax paper squares.  I draw a rectangle for the sleeping bag pattern.
 

Put the wax paper over your pattern

Using tip 2 or 3, pipe your outline with 20 second royal icing

Then fill your outline

Let it sit for about 20 minutes before you add the pillow

Pipe the pillow

Fill the pillow & let it sit for 20 minutes

Pipe the head

and the body

Pipe the top cover of the slumber bag

and fill

add coordinating polka dots, stripes or whatever your heart desires

Add hair.  Using a toothpick & black dye, draw the eyes and mouth on. I use petal dust to make her cheeks rosey

Happy 85th Grams!


For Gram's Birthday I found a great recipe on Smitten Kitchen.   When I was a little girl my Gram's had a rhubarb plant in her backyard. She would pick some of it and make Strawberry Rhubarb pie...love the tartness of the rhubarb.  She also makes an awesome Lemon Meringue Pie :)  I think Gram's was surprised when I told her what her Birthday dessert was.  She said she hadn't had strawberry rhubarb in ages.  We called it Strawberry Crisp so my Mr. Picky (aka my sweet husband) would try it.  We laughed when we were done because he had 2 pieces of "I don't know what it is" in his bowl. Then we told him what it was and he said "I knew you put something in there that wasn't normal."


I added oatmeal to my topping

Congrats to Wyatt & Gil

The "C"'s are made with royal icing. Before they were dry I sprinkled clear sanding sugar on them then
shook off the excess once they were dry.

Congrats Jade

Rain in June, in Santa Barbara? You are kidding me, right?  Weathermen kept predicting rain showers over the weekend.  On our way to the park where the graduation party was to be held, sprinkles started hitting our windshield.    Luckily it never did much more than sprinkle.

Jade loved her cupcakes and she admitted to me she is "Cupcake Obsessed".   Her party colors were orange & pink... One of my favorite color combos.  

Congrats Jade!
