So I decided to give French Macaroons another try. My first attempt
(here) was somewhat of a fail because I ended up with only 4 "sandwich" cookies. Most of them broke when I took them off the wax paper. This time it went much better but I still only ended up with a dozen presentable macaroons & I doubled the batch. I bought Bob's Red Mill Almond Flour instead of trying to make my own (too much work with a mini food processor & sifting thru a wire strainer to get the big pieces out). I made these for a birthday at my office - who is on a dairy free, gluten free diet. They came out much better than my 1st attempt and I'm hoping the next try goes better than my 1st 2 attempts.
I used
Martha Stewart's recipe this time & it was almost identical to the 1st one that I used.
Bob's Red Mill Almond Meal/Flour
Confectioner's sugar & almond flour after mixing in the food processer
Sifting the sugar/almond mixture
Love the measuring spoons DH bought me for Christmas
Egg whites, cream of tartar, superfine sugar
Piped macaroon
