S'more Cupcakes

These turned out way too sweet. I used a box mix because I was pressed for time. I put a 1" square of graham cracker in the middle of the cupcake before baking & then topped the cupcakes with a fluff frosting. The frosting is a bit too sweet for me. Next time I'll try doing a Swiss Meringue Butter Creme.
Marshmallow Frosting
1 cup marshmallow (jar)
2 cups confectionary sugar
1/2 cup butter or margarine, softened
1 to 2 teaspoons milk
Microwave fluff for 15 to 20 seconds. In large bowl, beat fluff, butter, and powdered sugar on low speed until blended. Beat in enough milk, 1/2 teaspoon at a time, to make frosting spreadable. Enjoy!

Ice Cream Maker

I received my KitchenAid Ice Cream Maker attachment on Friday. My first batch was Vanilla Bean. Impressive..very smooth & creamy but way too high in fat. I'll alter it next time and try to reduce the amount of fat in it. This morning I made Pumpkin Ice cream using fat free 1/2 and 1/2, so it's much lower fat with only 1 cup of heavy whipping cream & no egg yolks. I will try to alter it more and see how low I can get it without losing it's taste & constistancy. Next I'll try to copy Lappert's Kauai Pie Ice Cream.

Vanilla Bean Ice Cream recipe

1 cup of heavy cream
1 cup of half-and-half
2 vanilla beans
5 large egg yolks
½ cup of granulated sugar

Preparation Instructions:
In a medium heavy sauce pan, combine the cream and the half-and-half.Split the vanilla beans in half lengthwise and, using the tip of a knife, scrape out the small seeds into the cream mixture and drop in the pods.Bring the mixture to a boil, then remove from the heat.In a bowl, whisk together the egg yolks and sugar until thickened and pale.Pour in the hot cream mixture and stir until thoroughly combined.Strain into a large container and refrigerate until cold.When the cream mixture is cold, pour it into the bowl of an ice cream maker and freeze as directed in the manufacturer's instructions.

Pumpkin Ice Cream

14 oz can of pumpkin
½ cup brown sugar
¼ tsp cinnamon
1/8 tsp nutmeg
¼ tsp ginger
½ cup maple syrup
1 cup whipping cream
2 cups fat free half and half
Mix all ingredients in a saucepan. Cool in refrigerator. Pour into ice cream maker and churn for 20-30 minutes.

Lemon Cupcakes with Lemon Whip Cream

Lemon Whip Cream

1 c. chilled heavy whip cream
2 tbsp confectioners sugar
1 tbsp grated lemon peel
2 tsp fresh lemon juice

Combine all ingredients in chilled steel bowl. Using electric mixer, beat to soft peaks.

I filled the Lemon cupcakes with Lemon Curd.

Lollipop Tag

This is called a Lollipop Tag, I stuck it in an orchid I am taking my mom for her Birthday. We are taking her on a surprise day trip in celebration of her 60th Birthday. This tag tells her what to wear & what time we will pick her up. We had planned on going 5/9 but the Jesusita Fire postponed our trip.

Sorry I haven't posted in a week.. It's been a long week. We were put on evacuation warning Tuesday, May 5th due to the Jesusita Fire in Santa Barbara. We were put on mandatory evacuation on Wednesday, May 6th. We were able to return home on Saturday, May 9th. The fire came within 1/2-3/4 of a mile from our street. It is a large fire, stretching from Montecito (where my family lives) to Goleta. So far everyone is safe and the fire is 55% contained.

I promise I will get busy and I will post this week.
