These turned out way too sweet. I used a box mix because I was pressed for time. I put a 1" square of graham cracker in the middle of the cupcake before baking & then topped the cupcakes with a fluff frosting. The frosting is a bit too sweet for me. Next time I'll try doing a Swiss Meringue Butter Creme.
1 cup marshmallow (jar)
2 cups confectionary sugar
1/2 cup butter or margarine, softened
1 to 2 teaspoons milk
Microwave fluff for 15 to 20 seconds. In large bowl, beat fluff, butter, and powdered sugar on low speed until blended. Beat in enough milk, 1/2 teaspoon at a time, to make frosting spreadable. Enjoy!
